Hometown Meatloaf Recipe

Another big thank you going out to Mrs. O. my favorite retired Home Ec. teacher (retired). Great co-worker, kitchen oracle, and wonderful friend. This meatloaf recipe will have your family asking “meatloaf again?” and mean “can we have this meatloaf again soon?”

Ingredients

3 eggs
1 cup milk
4 slices bread, torn
1/2 cup chopped onion
1 cup (4 oz.) shredded cheddar cheese
1 tsp. dried parsley
1 tsp. salt
1/4 tsp. pepper
2 lbs. lean ground beef
1/2 cup ketchup
1/2 cup brown sugar
1 tsp. mustard

Directions:

1. In a large bowl, beat eggs. Add milk and bread; let stand until liquid is absorbed. Stir in onion, cheese, and seasonings. Crumble ground beef over mixture; mix well.

2. Divide meat mixture in half; shape each half into loaf and place in loaf pan. Bake uncovered at 350 for 45 minutes.

3. Combine ketchup, brown sugar, and mustard. Spread over top of meatloaves. Bake 30 minutes longer, or until meatloaf is done. Remove from pans and let stand for 10 minutes before serving.
