My favorite retired Home Ec Teacher shares yet another one of her easy to make but yummy to eat recipes. This one’s a hit with the whole family at breakfast.
Monkey Shine Chocolate Chip Muffins
3 cup flour
2 cup sugar
2 tsp. baking soda
1 1/2 tsp. salt
1 cup sour cream
6 ripe bananas, mashed
1 (11-12 oz.) pkg. chocolate chips
Mix dry ingredients together in large bowl; set aside. Beat eggs with electric mixer until fluffy. Add sour cream and mashed bananas; mix well. Add dry ingredients, and mix just until blended. Stir in chocolate chips.
Fill greased or lined muffin tins 3/4 full. Bake at 375 for 20-25 minutes, or until muffins test done. Remove to wire racks to cool completely.
