Harvest Moon Creamy Pumpkin Soup

When the weather turns cold, the mother in me always says it’s soup weather. This recipe is easy and tasty. Why not try it the next time the cold winds blow your way.

Ingredients

6 slices of Bacon
1 tablespoon Butter
1 Med. Onion
1 Clove of Garlic
1 tablespoon Flour
1 teaspoon Salt
1 can of Pumpkin Puree
1/8 teaspoon Black or White Pepper
1 teaspoon Cinnamon
1 Cup of Heavy Cream
2 Cup Chicken Broth
Yogurt
Parmesan
Parsley

Directions:

1. In hot pot cook bacon strips until crisp then remove, leave drippings, set aside bacon.
2. Add butter, onions, and garlic to drippings. Saute until onions are slightly clear.
3. Add flour to make a roux.
4. Add broth, pumpkin, and heavy cream and stir until nice and smooth.
5. Add all spices listed.
6. Serve immediately, in a bowl, stir in 1 dollop of yogurt.
7. Top with parsley, Parmesan, and crumbled bacon. Serve with hot crusty bread.
